Ingredients

- 1 tbspchia seeds
- 3 tbspwater
for the chia egg
- 450 mlkefir
1% fat
- ⅓ tspbaking soda
- 2 tbsperythritol
- pinchsalt
- 165 gcornmeal
150-180g, sifted
- 125 mlwater
about half a cup, to loosen
- vegetable oil
for frying
Instructions
Mix 1 tablespoon chia seeds with 3 tablespoons water and let thicken for a few minutes.
Whisk 450ml kefir with 1/3 teaspoon baking soda, 2 tablespoons erythritol and a pinch of salt.
Stir in the chia gel and 150-180g sifted cornmeal.
Add about 1/2 cup water to reach a pourable batter.
Fry the pancakes in a little oil until golden on both sides and serve with sour cream and sugar-free syrup.
