High-Protein Baked Lentil Cottage Cheese Patties

Light oven-baked patties with red lentils, cottage cheese, cheese and fresh herbs. High in protein, gluten-free and served with a dollop of sour cream.

Ingredients

  • 100 gred lentils
  • 1 cupwater
  • 100 gcottage cheese
  • 1egg
  • salt
  • mixed herbs

    a generous handful

  • 50 gcheese

    grated

  • olive oil

    for greasing

  • sour cream

    for serving

Instructions

  1. Simmer 100g red lentils in 1 cup water for , until the liquid has evaporated.

  2. Blend the lentils with 100g cottage cheese, 1 egg, salt and a generous handful of chopped herbs until smooth.

  3. Stir in 50g grated cheese.

  4. Grease silicone molds with olive oil and fill with the mixture.

  5. Bake at 180°C for 20- until set and lightly golden.

  6. Serve warm with a dollop of sour cream.
