Ingredients

Ingredients updated to metric measurements
  • 200 gzucchini

    0.5 zucchini

  • 300 mlwater
  • 200 grolled oats

    ground

  • 30 gpumpkin seeds

    toasted, chopped

  • 30 gsunflower seeds

    toasted, chopped

  • salt

    to taste

  • dried basil
  • 5 gdry yeast
  • 100 goat flour
  • 30 mlolive oil
  • black sesame seeds

    for topping

Instructions

  1. Simmer the zucchini in water until very soft, then purée with a stick blender.

  2. Whisk the yeast into warm zucchini purée and rest to bloom.

  3. Mix oats, oat flour, seeds, basil and salt, then combine with yeast liquid and olive oil.

  4. Divide the dough into three bars and place them side by side in an oiled loaf pan.

  5. Brush with vegetable oil, sprinkle with black sesame and rest in a warm place.

  6. Bake at 180°C for 40- until the crust is dark and resonant.
