Pumpkin Oat Kefir Bread (No Flour)

Moist pumpkin oat loaf enriched with kefir, a single egg and crunchy pumpkin seeds. Five ingredients, one pan, simply hearty.

Ingredients

Ingredients updated to metric measurements
  • 200 mlkefir or yogurt
  • 1egg
  • 170 gpumpkin

    puréed

  • 250 grolled oats
  • salt
  • ½ tspbaking powder
  • pumpkin seeds

    for topping

Instructions

  1. Steam or roast the pumpkin until very soft, then mash into a purée.

  2. Whisk kefir with the egg and pumpkin purée.

  3. Fold in oats, salt and baking powder to a sticky batter.

  4. Spread into an oiled loaf pan and sprinkle pumpkin seeds on top.

  5. Bake at 180°C for 40- until the top is deep orange-gold.

  6. Cool in the pan before slicing.
