Ingredients

- 150 grolled oats
- 100 gflax seeds
- 20 gpsyllium husk
- 20 gchia seeds
- Italian herbs
- salt
to taste
- turmeric
- 50 gspinach
blanched 2-3 minutes
- 350 mlwater
- 20 mlolive oil
- 2 tbspsugar-free syrup
- 130 gsunflower seeds
- 60 gpine nuts
- 20 gpumpkin seeds
Instructions
Blanch the spinach in boiling water for 2-, drain and purée with water, olive oil and sugar-free syrup.
Combine the oats, flax, chia, psyllium, sunflower, pumpkin seeds and pine nuts in a bowl with salt, turmeric and Italian herbs.
Pour in the spinach purée and stir until evenly hydrated; let rest for to thicken.
Transfer the dough to an oiled loaf pan, smooth the top and sprinkle with extra seeds.
Bake at 180°C for 40-, then cool completely before slicing.
