Ingredients

  • 150 grolled oats
  • 100 gflax seeds
  • 20 gpsyllium husk
  • 20 gchia seeds
  • Italian herbs
  • salt

    to taste

  • turmeric
  • 50 gspinach

    blanched 2-3 minutes

  • 350 mlwater
  • 20 mlolive oil
  • 2 tbspsugar-free syrup
  • 130 gsunflower seeds
  • 60 gpine nuts
  • 20 gpumpkin seeds

Instructions

  1. Blanch the spinach in boiling water for 2-, drain and purée with water, olive oil and sugar-free syrup.

  2. Combine the oats, flax, chia, psyllium, sunflower, pumpkin seeds and pine nuts in a bowl with salt, turmeric and Italian herbs.

  3. Pour in the spinach purée and stir until evenly hydrated; let rest for to thicken.

  4. Transfer the dough to an oiled loaf pan, smooth the top and sprinkle with extra seeds.

  5. Bake at 180°C for 40-, then cool completely before slicing.
