Ingredients

  • 15 gpsyllium husk
  • 20 gchia seeds
  • pinchsalt
  • 300 mlwater
  • 2 tbsplemon juice

    or 1 tbsp apple cider vinegar

  • 150 galmond flour
  • 100 gflaxseed flour
  • 50 gcoconut flour
  • 1 tspbaking soda
  • 1 tspbaking powder
  • 50 gground flaxseed
  • 15 graisins

  • 100 mlwater

    for the raisins

Instructions

  1. Mix 15g psyllium husk, 20g chia seeds and a pinch of salt with 300ml water and 2 tablespoons lemon juice. Let rest until gelled.

  2. Combine 150g almond flour, 100g flaxseed flour, 50g coconut flour, 1 teaspoon baking soda, 1 teaspoon baking powder and 50g ground flaxseed.

  3. Fold the flour blend into the psyllium mixture until a firm dough forms.

  4. Optional: soak 15g raisins in 100ml water and fold in.

  5. Shape into a loaf and bake at 180°C for , then cool fully before slicing.
