  • 1 cupegg whites
  • pinchsalt
  • 3 tbspwine vinegar

    3-6 tablespoons to taste

  • 3 tbspwater

    3-6 tablespoons

  • 30 mlolive oil
  • 100 gflaxseeds

    ground

Instructions

  1. Whisk 1 cup egg whites with a pinch of salt until foamy.

  2. Stir in 3-6 tablespoons wine vinegar and 3-6 tablespoons water, followed by 30ml olive oil.

  3. Fold in 100g ground flaxseeds and let the batter rest until it thickens into a spoonable dough.

  4. Transfer to a greased loaf tin and level the top. Bake at 180°C for about , until firm and golden.

  5. Cool on a rack before slicing — the crumb firms up as it rests.
