Kefir Oat Bread with Walnuts, Basil & Raisins

Tender oat loaf bound with kefir and one egg, folded through with toasted walnuts, sesame and plump raisins. Flourless and fragrant with dried basil.

Ingredients

  • 130 goats

    ground in a coffee grinder

  • 30 gwalnuts

    chopped

  • 30 gsesame seeds

    toasted, plus more for topping

  • pinchsalt

    to taste

  • 10 gbaking powder
  • tspdried basil
  • 250 mlkefir

    or yogurt; 1 glass

  • 1egg
  • 30 graisins

Instructions

  1. Grind 130g oats to a flour. Toast sesame seeds and chopped walnuts briefly in a dry pan.

  2. Combine the oat flour with 30g walnuts, 30g sesame, salt, 10g baking powder and dried basil.

  3. Whisk 1 egg with 250ml kefir and stir into the dry mix. Fold in 30g raisins until evenly distributed.

  4. Transfer to a greased loaf tin, sprinkle with more sesame seeds and bake at 190°C for 35-, until golden. Cool before slicing.
