- 500 ggluten-free flour blend
- salt
- ½ cupwalnuts
pan-roasted, chopped
- raisins
a handful
- 50 mlolive oil
- 1 cupkefir
or yogurt
- 11 gbaking powder
- 1 tbspsugar-free syrup
- 50 mlwater
30-50ml as needed
Instructions
Boil 1 carrot until soft, cool, then grate finely.
Combine 500g gluten-free flour blend with a pinch of salt, the grated carrot, 1/2 cup chopped roasted walnuts and a handful of raisins.
Stir in 50ml olive oil, 1 glass kefir, 11g baking powder, 1 tablespoon sugar-free syrup and 30-50ml water until a shaggy dough forms.
Knead briefly, shape the loaf on an oiled baking tray and slash the top a few times.
Bake at 200°C for 40- until the crust is golden.
Cool completely before slicing. Best eaten within 3 days.
