Crusty dark bread made from ground flaxseed and psyllium, shaped into three batons and finished with garlic rub. Vegan, flour-free and gluten-free.

Ingredients

  • 240 gflaxseed

    ground in a coffee grinder

  • 2 tspbaking powder
  • salt

    to taste

  • 40 gpsyllium
  • 320 mlhot water
  • olive oil

    for brushing

  • coriander

    for topping

  • garlic

    for rubbing after baking

Instructions

  1. Mix 240g ground flaxseed with 2 teaspoons baking powder, salt and 40g psyllium.

  2. Pour in 320ml hot water and stir until the dough holds together.

  3. Divide the dough into 3 parts and shape into batons; place in a baking dish.

  4. Brush with olive oil and sprinkle with coriander.

  5. Bake at 180°C for 30-; cool then rub the crust with fresh garlic.
