High-Protein Cottage Cheese Oat Bread (No Wheat)

Hearty oat bread kneaded with cottage cheese, amaranth, sesame and psyllium, rolled in oats for a rustic crust. Served with a dill-garlic cottage cheese spread.

Ingredients

  • 200 gcottage cheese
  • 25 gamaranth
  • 180 goats
  • 1 tbspsesame seeds
  • 25 gpsyllium husk
  • 260 gsoft cottage cheese

    for the spread

  • dill

    chopped

  • garlic
  • black pepper

Instructions

  1. Whisk a pinch of salt with 200g cottage cheese, then stir in 25g amaranth, 180g oats and 1 tablespoon sesame. Rest .

  2. Fold in 25g psyllium husk, mix well and rest another until the dough firms up.

  3. Shape the dough into a loaf on parchment, brush with olive oil and roll in extra oats. Bake at 200°C for 25-.

  4. Blend 260g soft cottage cheese with chopped dill, garlic, black pepper and salt for the sandwich spread.

  5. Cool the bread slightly, slice and serve thick wedges with the herbed cottage cheese spread.
