Cloud-Soft Cottage Cheese Bread
A soft flour-free bread built on ground sunflower seeds, flaxseed and cottage cheese. Eggs provide lift and the loaf bakes in a silicone mold.

Ingredients
- 50 gflaxseed
- 100 gsunflower seeds
- 1 tspbaking powder
- ½ tspsalt
- 3 pieceegg
- 1 tbspolive oil
- 200 gcottage cheese
- sunflower seeds
for topping
- coriander
for topping
Instructions
Grind flaxseed and sunflower seeds in a blender
Mix with baking powder and salt
Beat eggs with olive oil and cottage cheese
Combine wet and dry ingredients into a dough
Grease a silicone mold
Transfer the dough and sprinkle with sunflower seeds and coriander
Bake at 180 C for 45-
