  • 75 galmond flour

  • 65 gsesame seeds

    ground

  • 10½ gpsyllium husk

    ground

  • dried garlic
  • sun-dried tomatoes

  • 7½ gbaking powder
  • 3 gbaking soda
  • ½ gxanthan gum
  • 3egg whites
  • 1avocado

    mashed

  • 30 mlolive oil

    extra virgin

  • 15 mlapple cider vinegar
  • sesame seeds

    for topping

Instructions

  1. Whisk 75g almond flour, 65g ground sesame, 10.5g psyllium, dried garlic, chopped sun-dried tomatoes, salt, 7.5g baking powder, 3g baking soda and 0.5g xanthan gum.

  2. Mash the avocado and blend with 3 egg whites, 30ml olive oil and 15ml apple cider vinegar.

  3. Combine wet and dry mixtures, adding 1-2 tablespoons water if too thick; rest .

  4. Oil your hands, shape 3 small breads on a greased tray, sprinkle with sesame seeds and bake at 180°C (360°F) for 35- until firm.
